Yes. 'Mail -> Preferences -> Mail -> Basics -> Owner:' displays the server name.
We found it when the user sent an unrelated message to the Helpdesk - the 'From' field displays the Server Name - Sent By 'User Name'.
Checking the user's Sent items, the mails were being sent properly until last evening, when the 'From/Send By' scenario started. Fixed the mail file owner, the problem is now resolved.
Found reports of this happening in the 6-7 forum as well as the 8.5 forum, but no reasons why.
